We start with cilantro and lime to give it the flavor of the Carribbean, then add a the smokey maple you expect from a Midwest BBQ, and finish with fresh chili peppers and raw onions. Take a standard BBQ sauce that you enjoy and consider what it would be like to add more onions, a bit more bite in terms of heat, and some more smokiness – all gathered in an amorphous relish-like consistency. I tried it on both pork and chicken and found it really blasts the flavors of both by a factor of 11.
